Mexican Sasquashes

These are so delicious and full of flavor, great way to use an abundance of squash!

* Mexican Sasquashes *

1lb ground beef
1 medium onion, diced
2 jalapenos, diced (no seeds)
1/4 cup cilantro leaves
1 egg
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp chili powder
1/8 tsp jalapeno powder (or cayenne)

Mix everything above with your hands

I had 6 small mexican squash and this mixture fit perfectly so if you had medium sized I would say 4 and large sized use 2.

Can use zucchini or yellow squash as well!

Wash and cut ends off squash and cut in half lengthwise. Scoop out most of the insides and reserve for another recipe or throw it in with your meat mixture

Sprinkle hollowed squash with salt, pepper and garlic powder and fill each squash with the meat mixture then top with a half a slice of bacon.

Bake at 450 for 20 min and then broil for 3 min to crisp bacon.
