Chicken Bacon Swiss Lasagna

* Chicken Bacon Swiss Lasagna *

 

1 large (2 medium or 3-4 small) yellow squash or zucchini – sliced lengthwise 1/4 inch thick

1lb chicken breasts, boneless and skinless

5 slices cooked bacon, crumbled (reserve a bit for top)

3 tbl unsalted butter

1 1/2 cups heavy whipping cream

12 oz Swiss cheese, shredded

1/2 tsp xanthan gum

Oil for cooking

I used Greek seasoning for this recipe but you could use anything you’d like!

 

Season chicken and saute in oil until cooked and browned then remove to plate.

Gently toss squash slices with drizzle of oil until covered and season.  Sear slices a few at a time over medium high heat and remove to plate.

Once chicken has cooled, slice into thin bite sized pieces and taste for seasoning.

Mine didn’t have enough so I tossed it in an oiled pan and sauteed for a min with extra seasoning – I recommend this step!

For the sauce, melt butter over low heat and add cream and pinch of salt. Heat until warm and sprinkle in xanthan gum while stirring until completely combined. Add in Swiss cheese, reserving 1/4 cup for the top.  Once cheese has melted, remove from heat.

I used a loaf pan for this…

Layer squash, chicken and bacon then pour 1/3 of the sauce on.

Repeat twice more.

Sprinkle reserved grated swiss cheese on top and bake at 350 for 25 min and sprinkle with bacon when it comes out!
