I’m a huge fan of soup and this is one of my favorites. It’s very easy to make it keto friendly! I also love adding shredded beef which turns this into a complete meal.
* French Onion Soup *
2 large onions, sliced thin
3 tbl butter
2 cups water
1/4 cup Johnny’s Au Jus (can just use 2 cups of beef broth instead of this and the water but unless it’s homemade it won’t taste nearly as good!)
4 tbl sherry cooking wine
cheese (gruyere, swiss, provolone, mozzarella, etc)
Slightly caramelize the onions with salt to taste then deglaze the pan with the sherry.
Add water and au jus and simmer for 20 min.
This is where you would add about a lb of shredded beef, if desired, so it can heat thru in the soup.
Portion out onions and meat into oven safe ramekins first, then pour the soup over top.
Top with cheese (or cheeses!) of your choice which can be shredded or sliced.
Broil until cheese is brown and bubbly then serve!
