This was just something I was playing around with and it came out very good with one simple rule…it must be refrigerated overnight before eating!
First, saute a medium diced onion in 1/2 tbl butter until lightly browned. Season with salt and set aside to cool.
1 stick of softened butter
6 room temperature eggs
3 tbl psyllium husk
1/4 tsp onion powder
1/8 tsp garlic powder
1/8 tsp white pepper
1/8 tsp salt
Mix ingredients together and stir in cooled onions saving a few for the top.
Bake at 375 degrees for 22 – 24 min.
When you take it out of the oven, it will be full of bubbly melted butter. Let it cool in the pan and all of the butter will absorb.
Once cooled, wrap in foil and refrigerate until completely cold or overnight. Then slice and saute in a dry pan until browned!
The taste reminds me of potato pancakes, it’s delish! You can eat this hot out of the oven but it’s very eggy, definitely worth the time to chill it first!
