White Castle Egg Pie is one of my family’s favorites so I’m always thinking of variations and this one is a real winner!!
* Green Chile Egg Pie *
9 eggs
1/3 cup mayo
1 lb ground beef
1 – 10 oz can whole green chiles, sliced in strips
1 batch taco seasoning
1 cup shredded cheese (I use pepper jack but any will work and feel free to add more!)
Brown ground beef (don’t drain) and add taco seasoning. Stir and cover to simmer over low heat for 10-15 min (this makes it super tender and hella tasty!)
Spread meat mixture over bottom of greased 9×13 inch casserole.
*TIP – for some reason, the only thing that ensures this doesn’t stick in my ceramic casserole dish is bacon grease
Lay green chile strips evenly over meat mixture.
Beat eggs and mayo with a healthy pinch of salt and pepper (I also added 10 drops of tapatio, optional) and pour over meat mixture/chiles.
Sprinkle cheese over the top.
Bake at 350 for 25 min and let sit for a few minutes before slicing.
Serve with sour cream, picante sauce, salsa, guacamole, green onions, etc
btw, cottage cheese with tapatio is AMAZING!
