The whole idea for stuffed eggs came about when I was having to use so much mayo/sour cream when making different deviled egg varieties due to the yolk. So I eliminated the yolk and stuffed with yummy goodness! The variations are endless and the boiled egg white makes for an amazing carrier of ALL THAT IS DELICIOUS!
The very first stuffed eggs I made were Ham and Chive and they were amazing!
* Ham and Chive Stuffed Eggs *
6 hard boiled eggs, peeled, halved, yolks removed
Stuffing:
4 tbl cream cheese, softened
4 tbl mayo
1/8 cup chopped chives or green onions
1/4 cup chopped ham
Sprinkle of salt, white pepper, garlic powder
Stir to combine.
Sprinkle egg halves with salt and stuff!
Now, time to get creative!!
This is the base recipe for 12 egg halves, yolks removed and whites salted:
4 tbl each mayo (or sour cream) and cream cheese
Add in 1/4 cup of any cooked meat (diced, shredded, etc)
Add 1/8 cup of veggies or cheese
Sprinkle of salt and white pepper
Get even more creative by adding your favorite seasonings and toppings!

(served with spicy chicken patty parm and caesar salad)
