This Keto Dirt Cake far exceeded my expectations and it is absolutely amazing!!
* Keto Dirt Cake *
For the Pudding:
1 cup unsweetened almond milk
1 raw egg yolk
1/4 cup sf sweetener (I used erythritol)
Pinch of salt
1/2 tsp xanthan gum
1/2 tsp vanilla extract
1 tbl butter
While heating almond milk over low heat, whisk raw egg, sweetener and salt together in a bowl. Once milk is heated, slowly stream just a bit into the egg mixture while whisking to temper the eggs (so they don’t scramble) then combine the egg mixture into the pot of warm almond milk. Sprinkle in xanthan gum and whisk in. Bring to a gentle boil and remove from heat. Add in butter and vanilla extract and whisk together. If your xanthan gum seems to be sitting on top of the pudding, use an immersion blender to completely mix and thicken. Cover and place in fridge.
For the Cream Cheese:
4oz cream cheese, softened
1/4 cup sf sweetener (I used erythritol)
Mix together until smooth and creamy.
For the Whipped Cream:
1/2 cup heavy whipping cream
Beat until soft peaks form.
Mix pudding into cream cheese mixture and gently fold in the whipped cream.
For the Cookie Crumbles:
6 Double Chocolate Keto Kookies, hand crumbled so they’re still a bit chunky
To assemble:
I used 10 oz Pyrex bowls and it made 4 servings
Put 2 tbl cookie crumbs in the bottom of your bowl, top with 1/4 cup cream cheese/pudding/whipped cream mixture and repeat 1 more time…then top with 1 tbl of cookie crumbs and put in fridge for an hour before serving.
