I’ve been making gumbo for years and years, it’s definitely a favorite! Unfortunately, roux is not keto friendly so the addition of heavy whipping cream takes it’s place perfectly!
* Gumbo *
2 tbl fat (I used bacon grease)
1 pkg kielbasa, sliced
1lb cooked chicken breast, chunked
1 onion, diced
2 stalks celery, diced (I also use the inner stalks with all the leaves!)
1 bell pepper, diced (I omitted this cuz I didn’t have it)
Pan fry kielbasa in desired fat. Once kielbasa is browned and has released its grease, add diced veggies and stir to coat. Cook until barely soft then add cooked, chunked chicken. (I simmer my chicken in chicken stock and then chunk)
Add in spices:
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1 tbl dried parsley
1/2 tsp white pepper
1/2 tsp Dak’s Spices Cajun Voodo
1/4 tsp habanero powder
Stir to coat and allow to cook for just a min then add in 1/2 can of rotel (or diced tomatoes) and let simmer until veggies are softened.
At this point, add 1/3 cup of heavy cream for added fat and richness.
This recipe makes a pretty spicy gumbo so omit or lessen the spice if desired.
I serve with sour cream
