I knew as soon as I saw the Keto and Co Riced Broccoli in The Keto Box this month that I was going to make Cheesy Broccoli Soup!
Broccoli soup and I go WAY back!
There are 2 kinds of broccoli soup as far as I’m concerned…
Broccoli Cheese Soup – chunky pieces of broccoli with a somewhat cheesy broth
Cheesy Broccoli Soup – CHEESE soup with teeny tiny specs of broccoli
I prefer the latter!
This recipe is just that
* Cheesy Broccoli Soup *
2 tbl butter
1 onion, diced
1 pkg Keto and Co Riced Broccoli
1 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 cups chicken stock (homemade is best!)
1/2 cup heavy whipping cream
2 cups cheese, shredded (I used sharp cheddar)
Prepare Keto and Co Riced Broccoli as directed on package, including 1/4 tsp each salt, black pepper and garlic powder ( I added diced onion as well, optional).
Set aside.
Saute onion in butter until edges start to brown.
I used homemade stock so I tossed the fat from the top into the onions to melt.
Add prepared broccoli and let saute for just a minute then add chicken stock. Stir in salt, black pepper and garlic powder then bring to a simmer. Add cream and heat thru.
Add shredded cheese, stir to melt and combine.
Serve with a sprinkling of cheese!
