Buffalo Chicken Pork Rind Nachos

Omg, these buffalo chicken pork rind nachos are seriously amazing!!

Even if you’re not a fan of pork rinds, you’ll love these!

Here’s how I make em . . .

Simmer 1lb of boneless/skinless chicken breasts or thighs until tender in salted water (or skip this step and buy a rotisserie chicken)

Shred chicken and saute quickly in ghee/butter/oil and season with salt and your favorite spicy seasoning. For this, I use Daks Spices Cajun Voodoo which gives the perfect flavor and is also a MUST when I make my gumbo!

Set chicken aside and melt 1/4 cup of butter and add 1/4 cup of hot sauce, pinch of salt and a couple sprinkles of garlic powder then stir to combine. Keep warm over low heat.

Put pork rinds on plate (I prefer Mac’s or kroger brand) and I break them up a bit into smaller bite sized pieces.

Add shredded chicken and sprinkle with shredded cheese of choice (I like colby jack) and heat in microwave for about 25-30 seconds or until melted.

Drizzle with buffalo sauce and top with ranch or blue cheese!

Optional: beat a few eggs with salt and 1/8 tsp chili paste then fry in oil on medium high heat, lifting sides to get raw egg underneath and flip like a pancake when top is solid but still wet and lightly browned on other side…remove onto plate and slice into thin strips and add on top of chicken and melted cheese before drizzling buffalo sauce!
