I absolutely LOVE lemon.
One of the first keto desserts I ever made was my Ooey Gooey Lemon Cake.
I made it for the first time last year on my birthday. I decided to make it again this year but this time around I used Good Dee’s Blondie Mix as the base and it made it even more rich and dense, exactly what I was hoping for!
If you aren’t familiar with Good Dee’s low carb mixes, do yourself a favor and check them out. They are nut free, sugar free, gluten free, malitol free and absolutely delicious!!

* Ooey Gooey Lemon Blondies *
– Bottom Layer –
1 bag Good Dee’s Blondie Mix
2 eggs
1/2 cup butter, melted
1 tsp vanilla
3 true lemon packs
Mix everything well and pour into 8 x 8 pan lined with parchment paper and greased.
Don’t be like me…use parchment paper! Set aside and make top layer.
– Top Layer –
8 oz cream cheese, softened
1/3 cup sugar free sweetener (I used erythritol)
2 eggs
3 true lemon packs
Beat until smooth and creamy.
VERY carefully and slowly, pour cheesecake mixture over uncooked bottom layer and spread gently to cover evenly.
Bake at 325 for 30 – 35 min or until top is firm.
Let cool completely before removing (with parchment!) and slicing.
Refrigerate any leftovers – it’s almost more delicious when cold!
