I’ve included the recipe for both a full 9 inch pie AND an individual serving 🙂
* Frozen Peanut Butter Pie *
FOR AN INDIVIDUAL SERVING
For the Filling:
1 oz cream cheese, softened
1/8 cup natural peanut butter (I used crunchy)
1/8 cup powdered sf sweetener (I used erythritol)
1/8 tsp vanilla
1/8 cup fresh whipped cream
For the Crust:
1 Double Chocolate Keto Kookie
1/16 cup roasted pecans
1 tsp butter, melted
Crush pecans and Keto Kookies into a fine crumb, mix in melted butter and press into bottom of ramekin or small bowl. Blend filling ingredients (minus whipped cream) until smooth and then gently fold in whipped cream.
 Smooth filling onto crust, cover with plastic wrap and freeze for at least 4 hours or overnight then enjoy!
FOR A 9 INCH PIE
For the Filling:
8 oz cream cheese, softened
1 cup natural peanut butter (I used crunchy)
1 cup powdered sf sweetener (I used erythritol)
1 tsp vanilla
1 cup fresh whipped cream
For the Crust:
8 Double Chocolate Keto Kookies
1/2 cup roasted pecans
2 tbsp butter, melted
Crush pecans and Keto Kookies into a fine crumb, mix in melted butter and press into a 9 inch greased pie plate. Blend filling ingredients (minus whipped cream) until smooth and then gently fold in whipped cream. Smooth filling into crust, cover with plastic wrap and freeze for at least 4 hours or overnight.
Slice and enjoy!
* I prefer less sweet desserts and this was perfect, if you want it sweeter, add additional sf sweetener. 1 tsp per individual serving or 1/4 cup for a full pie.
