First, there was Dirt Cake . . .
Now let me introduce you to the all new and just as delicious, Sand Cake.
This recipe is even more special because it combines products from TWO of my favorite keto companies, ChocZero and Keto Kookie!
For Sand Cake, I used ChocoNite Milk Chocolate Hot Cocoa (also comes in Dark Chocolate and White Chocolate!) to make a quick and easy pudding that gets layered with cookie crumbles from Keto Kookie’s brand new flavor, Peanut Butter!

* Sand Cake *
For the Pudding:
1 1/2 cup unsweetened almond milk
1/2 cup heavy cream
2 raw egg yolks
1/2 cup ChocZero ChocoNite
Pinch of salt
1 tsp xanthan gum
1 tsp vanilla extract
2 tbl butter
While heating almond milk over low heat, whisk raw egg, ChocoNite, xanthan gum and salt together in a bowl. Once milk is heated, slowly stream just a bit into the egg mixture while whisking to temper the eggs (so they don’t scramble) then combine the egg mixture into the pot of warm almond milk. Bring to a gentle boil and remove from heat. Add in butter and vanilla extract and whisk together.
If your xanthan gum globs up the pudding, use an immersion blender to completely mix and thicken.
Cover and place in fridge to chill.
For the Cookie Crumbles:
4 – 6 Keto Kookies, ( used Peanut Butter), hand crumbled so they’re still a bit chunky
To assemble:
I used 10 oz Pyrex bowls and it made 4 servings
Put cookie crumbs in the bottom of your bowl, top with chocolate pudding and repeat 1 more time…then top with 1 tbl of sugarfree chocolate chips and the remaining cookie crumbs.
Put in fridge to chill for an hour before serving.
Even more delicious when served with fresh whipped cream!
