LC Foods<\/a>\u00a0was kind enough to send me some low carb baking goodies to play around with and this was\u00a0the first amazing thing I came up with…these are beyond incredible!!<\/p>\n

* Cheesecake Filled Snickerdoodle Cookie Sammiches *<\/p>\n

<\/p>\n

Cookies<\/strong><\/p>\n

1 bag LC Foods Snickerdoodle Cookie Mix<\/a>, made as directed<\/em> (12 huge, yes HUGE cookies)<\/p>\n

<\/p>\n

Cheesecake Filling<\/strong><\/p>\n

8 oz cream cheese, softened
\n1\/3 cup LC Foods Powdered Erythritol<\/a> (I used 1\/4 cup bc I prefer it less sweet)
\n2 tbl sour cream
\n1 tsp vanilla extract<\/p>\n

Beat everything until smooth<\/em><\/p>\n

<\/p>\n

Spread cheesecake filling on the bottom of cooled cookie and top with another cookie, then roll sides in 1\/4 cup<\/em> LC Foods SF Dark Chocolate Chips<\/a><\/p>\n

<\/p>\n

The cookies are very cake like and these are very similar to whoopie pies! Absolutely delicious!!<\/p>\n

You can also double the servings by spreading cheesecake mixture on bottom of cooled cookies and topping with chocolate chips (and\/or anything else you’d like!)<\/p>\n
