Ooey Gooey Lemon Cake

Oooey Gooey Butter Cake was always one of my favorite desserts prior to keto – the lemon variety especially! I had no choice but to keto-ize it!!

It the best of both worlds . . . cake AND cheesecake!

I hope you enjoy it as much as my family and I do!

*Ooey Gooey Lemon Cake *

3 large eggs
1/2 cup unsalted butter, softened
1/4 cup sf sweetener (I use erythritol or xylitol)
1/2 cup coconut flour
1/2 tsp sea salt
1/2 tsp baking soda
1/2 tsp vanilla extract
3 true lemon packets

Cream together eggs, butter, vanilla and xylitol.  Beat in coconut flour, salt and baking soda and true lemon. Push mixture down into 9×9 dish.

Beat the following ingredients until creamy and pour on top of uncooked cake mix:

8oz cream cheese, softened
1/3 cup sf sweetener (I  use erythritol or xylitol)
2 eggs
2 true lemon packets

Bake at 325 for 30 – 40 min or until top is firm.

you can sprinkle top of cake with powdered sf sweetener or lemon zest

    1. Absolutely! I’m not sure of the amounts but I would guess about 1 tbl juice and 1 tbl zest for both the base and the cheesecake topping. Let me know how it turns out!

  1. How many net carbs is this?? I made it and had a piece for breakfast lunch and dinner…. now I was afraid of how many carbs this is so I didn’t eat much else today but I’m super afraid I went over my max for today lol

  2. This is delicious! I made it for Christmas and even the non Keto eaters liked it How many servings does this make?

    1. Yes, you could use something like swerve that is erythritol mixed with stevia but pure stevia is just too bitter by itself.

  3. This has became a family favorite & I make it for everyones birthdays! I miss having lemon bars & such since doing keto & being allergic to almond flour really narrows things down for me, so this recipe is a game changer for me!
